Ingredients
5 cloves garlic, peeled
4 medium vine-ripe tomatoes, cored
1⁄2 cup canola oil
2 small yellow onions, cut into ¼” dice
1 tbsp. ground turmeric
1 tbsp. kosher salt
2 1⁄4 tsp. ground coriander
1 tsp. freshly ground black pepper
2 small heads cauliflower, cut into large florets
1 large jalapeño, stemmed and sliced ¼" thick
Instructions
Purée garlic and tomatoes in a blender; set aside. Heat oil in an 8-qt. Dutch oven over medium-high. Cook onions until slightly caramelized, 10–12 minutes. Stir in turmeric, salt, coriander, and pepper; cook 30 seconds. Add reserved tomato mixture; cook, stirring occasionally, until thickened, 10–12 minutes. Transfer half the sauce to a bowl. Fit cauliflower, stem side down into pot; pour reserved sauce and ½ cup water over top. Top with jalapeño; boil. Reduce heat to medium-low; cook, covered, without stirring, until cauliflower is tender, 45 minutes to 1 hour.
I felt that I wanted something a little heartier than just rice to go with my cauliflower dish, so I made a side dish using Italian Farro. Farro has a hearty, nutty taste and it's a great source of protein.
Italian Farro with Vegetables
8 oz, farro
1 tablespoon olive oil
1 medium onion finely chopped
1 large carrot finely chopped
1 stalk of celery finely chopped
1 clove garlic chopped
2 tablespoons tomato paste
1 cup finely chopped kale
2 to 4 cups of water or vegetable broth
salt and pepper to taste
Begin by cooking farro according to package directions.
Heat oil in saucepan, add onion, carrot, and celery. Cook until tender. Add chopped garlic and saute for approximately another minute. Add tomato paste, cooked farro and kale, stir well to combine. Add salt and pepper to taste. Add water or broth. Begin with 2 cups and add more if needed. Bring to a boil, reduce heat and cook and water has been absorbed.
I actually made both the cauliflower and farro last Sunday. The farro became my go to snack throughout the week. It was so good and so satisfying.
If you decide to give it a try, I hope you enjoy both dishes as much as I did.
This looks good. I think my boys would like it. I'll give it a try soon.
ReplyDeleteI was really surprised with the jalapeños, as I thought for sure that they would make the dish rather spicey. Not all all. I think that since they steam for 45 minutes, you get the flavor and not the spice.
DeleteI can't wait to try this. I love cauliflower and these two dishes look fabulous. I have a bag of farro but haven't really known how to approach it. You've guided me. Thanks, Rhonda.
ReplyDeleteI'm so happy!!! I think that once you try the farro, you're going to love it.
ReplyDeleteOoooh! I love cauliflower and spicy food. There is a nice Afghani restaurant here too. Afghani cuisine is fabulous. Thanks for sharing this. I really will give it a go.Xx
ReplyDeleteIf you like cauliflower, you are going to love this dish. Let me know what you think.
Deletemmm, this looks so good Rhonda. We'll have to try it. And maybe Kabul restaurant too.
ReplyDeleteKabul House is in Skokie. They have the best bread, moist and yet, just the right amount of chewiness. Soup comes with the meal. Be sure to get the lentil. And if you have room, share the ice cream. You'll think you've gone to heaven. My husband says that the chicken skewer is the best he's ever had. The restaurant is BYOB. Enjoy!!
DeleteThe whole meal looks superb - will be trying both of these. I love middle eastern food, and Italian as well :)
ReplyDeleteAlthough the farro is used in Italian dishes, I didn't add any Italian seasonings so it works really well with the cauliflower.
DeleteThis looks delicious, and if I ever get to Chicago I will be looking for that restaurant!
ReplyDeleteIf you ever get to Vhicago, you will be looking for me too ;)
DeleteYums! I need to try these:)
ReplyDeleteAll vegan ;)
DeleteWe are obsessed with cauliflower at the moment! Good timing.
ReplyDeleteGreat! Hope you enjoy it :)
DeleteRhonda,
ReplyDeleteI made the cauliflower last night and everyone loved it, even the children. Thanks again for sharing the recipe.
I'm so happy :) When you can please children with vegetables, it truly is a success!
DeleteI'm making this right now! It smells so good! I can't wait to try it. :)
ReplyDeleteI've heard from a few who have tried it and so far, it's a winner, even with kids. Here's hoping that it tastes as good as it smells!
