Sunday's Soup/Red Lentil, Tomato and Kale Soup

This past week has been a little difficult as my little dog has been quite ill. She's 15 years old, so time is not on her side. She is doing a little better, we'll see what this week brings.
Whenever my heart is heavy, soup is just about all I want to eat. So soup it is today, and probably for a few days to come.
I didn't intend it to be so, but this soup is perfect for the holiday season with the red and green colors. The best part is that it tastes so good and it's comforting to eat. It also makes up rather quickly as well. It would be great for lunch and will also freeze well. 
Red Lentil, Tomato and Kale Soup

1 large yellow onion chopped
1 tablespoon olive oil
1 tablespoon minced garlic
2 teaspoons paprika
1/2 teaspoon thyme
1/2 teaspoon cumin
1 cup red lentils
1 large can of chickpeas, drained and rinsed
1 large can of fire roasted diced tomatoes
6 cups vegetable broth
4 cups chopped kale
salt and pepper to taste 

Over medium heat, add oil to large soup pot. 
Add onions and saute until browned. 
Add garlic and spices and saute for approximately 2 minutes.
Add broth, lentils, chickpeas, tomatoes, and chopped kale. 
Bring to a boil and then reduce heat and simmer until lentils are tender, about 30 minutes.
Serve and enjoy. 
The soup is hearty, yet light. And even better, it's packed full of nutrients. So serve up a big bowl and enjoy.

  1. The soup looks pretty, and it sounds like it is tasty and comforting. I know all too well what you are going through with your little pup. It's so are to see them age and in ill health. While I know this is the natural progression of life, it is oh so difficult to "live it." My heart goes out to you and her.

    1. Thanks Linda. Of course this isn't my first rodeo, but this one seems especially difficult. But, I will say this, I would much rather I live without her, than she live without me. She is doing a little better, so I'm hoping that maybe we'll get a little reprieve. Of course regardless of the time, it's just never enough.

  2. I make a curried soup with much the same ingredients so I know I will like this. I usually add carrots to increase the vegetable content.

    1. Carrots, that's what I forgot!!!! When I was thinking about the soup, I had thought about adding carrots, and then once I actually put it together, totally slipped my mind. Thanks for the reminder :)

  4. This recipe could not have been more timely! When I got up this morning I knew I wanted to make some soup for dinner, hopefully using what I had in the house as I did not feel like going to the store. This is perfect, I had everything, including the kale! I even threw in some frozen corn that I had a partial bag of in the freezer. Thanks for posting, and I am sorry about your dog, I recently said goodbye to my girl last month and it is heartbreaking. My thoughts are with you.

    I hope your dog feels better soon, its so heartbreaking when they are sick and even more so when they are old. I'll be giving my own fur baby a snuggle and we will both send all our positive thoughts and love your way.
