Sunday Brunch


Isn't wonderful when we can have wonderful things to eat and save a few calories at the same time? Well, the recipe I'm sharing with you today is very tasty and so many calories are saved since there is no crust. I have also cut down on the calories a bit by using half and half rather than heavy cream, non-fat Greek yogurt rather than cream fraiche and non-fat milk rather than whole.
Crustless Spinach Quiche
1 tablespoon olive oil
1 large onion
1 large bunch of spinach (a big bag)
1/2 teaspoon of coarse salt
1/4 teaspoon of freshly ground pepper, or more  to your taste
3 eggs
3/4 cup milk
1/2 cup half and half
1/3 cup plain Greek yogurt
1/4 teaspoon nutmeg
1 cup shredded cheddar cheese

Preheat oven to 375 degrees.
Dice onion.
Heat oil in pan, add onion and cook until it begins to soften and become a bit brown.
Add spinach and cook until spinach has wilted. Add salt and pepper to taste.
 Beat eggs and combine with milk, half and half and yogurt. Grate cheese,
 and add to milk and egg mixture along with the nutmeg as well. Stir to combine.
Butter or use a cooking spray  to coat a 9" pie plate. As you see, it can be a bit full so you may need to take a bit out and bake in a smaller pan.
Slide into oven on the center rack and bake at 375 degrees for 25 minutes or until the edges have browned and the center is firm.
 Serve.
My breakfast was sooo good this morning. This is a favorite recipe of mine and it's great for a light supper as well.

  2. I think I'll make this for dinner one night this week. I don't like to have meat every night but I think my picky eaters would enjoy this with some fresh fruit. So good seeing you yesterday. Thanks.
