I cooked a full cup of dry so it made lots and lots of cooked. I'm trying to Eat to...Just had this for dinner!<br />I'm trying to Eat to Live and this salad fits the bill perfectly - left out the salt and olive oil. I also left out the corn (carbs!) and I only had a can of black eyed peas in the cupboard. But I added Little Gem lettuce and chopped tomatoes and like yourself, I added chopped green chilli.
