I am a rice girl too, being born and brought up in Louisiana. I don't think I ever had a white potato until I met my husband's family. It was always rice and I love it. If we wanted potatoes with dinner they were always yams, never white potatoes, and they were considered a side vegetable, not a starch so we would have the rice and the sweet potatoes as well! The only difference is that you form yours into patties, and ours is baked in a casserole dish. Now I want to try making patties sometime!
